Instant Pot Pork Loin with Rice
Serving: 4 people
Ingredients
1 pound pork loin
2 tablespoons olive oil
2 cups vegetable or chicken broth
1 cup of rice, rinsed (rice of your choice, I used yellow rice)
2-3 tablespoons of Sassy Spice
1 yellow pepper diced
1 green pepper diced
1 medium onion diced

Directions:
- Season the pork loin with Sassy Spice. Start with one tablespoon, sprinkle around the pork. Season to your liking.
- Heat the olive oil on Sauté mode. Brown all sides of the loin. About 5 minutes and then set aside.
- Add the peppers and onions and sauté for 10 minutes. Then set aside.
- Pour the broth and rice in the pot and insert the trivet.
- Place pork on the trivet.
- Seal the lid and select manual. Cook on high for 25 minutes. Close the steam valve.
- After 25 release then release the steam.
- Remove the pork and place on the serving plate and let sit for 5 minutes.
- Fluff the rice with a fork and transfer to serving bowl. Then add the sautéed vegetables on the rice for serving.
