Simple Insta Pot Pork Loin

Ingredients
1- 1 ½ pound pork tenderloin
2 tablespoon Sassy Spice
2 tablespoon olive oil or oil of choice
3 tablespoon wet mustard
1 cup vegetable broth
1 tablespoon All-purpose quick- mix flour
3 tablespoon soy sauce

Directions:
- Rub Sassy Spice on pork loin. Next rub the mustard over the sassy spice.
- Heat the oil on sauté and brown the pork on all sides for 5 minutes.
- Pour in the veggie broth and soy sauce.
- Seal the lid and make sure that the steam valve is sealed so no steam can be released.
- Cook on manual high for 20 minutes.
- When done let the steam release valve from the valve for 10 minutes.
- Slowly open the lid and remove pork. Let pork rest before slicing for service.
- On sauté, mix cornstarch with ½ cup of the cooking liquid and stir into the pot until the sauce thickens. This takes about 3 minutes.
- Pour the sauce over the tenderloin when serving.
