Roasted Rainbow Carrots

Ingredients
2 bunches rainbow carrots
1teaspoon olive oil
1 teaspoon Sassy spice or Highway to hell
Balsamic glaze
2-3 tablespoon of shredded parmesan cheese.

Directions:
- Preheat oven to 425 degrees.
- Peel and cut off the stems off the carrot.
- Lay the carrots on the pan and gentle glaze over with the oil. Then rub it in a bit with your hands
- Lightly coat all sides with Sassy spice and rub in the Sassy spice.
- Place in the oven and cook for 10-15 minutes. The size of the carrots play a big role on how fast they cook.
- Place on the plates and glaze with balsamic glaze. Then sprinkle the shredded parmesan cheese over the carrots.
- Remove from the heat and stir in the cheese until melted.
- Serve immediately.
