Roasted Rainbow Carrots

Ingredients

2 bunches rainbow carrots

1teaspoon olive oil

1 teaspoon Sassy spice or Highway to hell

Balsamic glaze

2-3 tablespoon of shredded parmesan cheese.

Directions:

  1. Preheat oven to 425 degrees.
  2. Peel and cut off the stems off the carrot.
  3. Lay the carrots on the pan and gentle glaze over with the oil. Then rub it in a bit with your hands
  4. Lightly coat all sides with Sassy spice and rub in the Sassy spice.
  5. Place in the oven and cook for 10-15 minutes. The size of the carrots play a big role on how fast they cook.
  6. Place on the plates and glaze with balsamic glaze. Then sprinkle the shredded parmesan cheese over the carrots.
  7. Remove from the heat and stir in the cheese until melted.
  8. Serve immediately.
