Instant Pot Pork Loin with Rice

Serving: 4 people

Ingredients

1 pound pork loin

2 tablespoons olive oil

2 cups vegetable or chicken broth

1 cup of rice, rinsed (rice of your choice, I used yellow rice)

2-3 tablespoons of Sassy Spice

1 yellow pepper diced

1 green pepper diced

1 medium onion diced

Directions:

  1. Season the pork loin with Sassy Spice. Start with one tablespoon, sprinkle around the pork. Season to your liking.
  2. Heat the olive oil on Sauté mode. Brown all sides of the loin. About 5 minutes and then set aside.
  3. Add the peppers and onions and sauté for 10 minutes. Then set aside.
  4. Pour the broth and rice in the pot and insert the trivet.
  5. Place pork on the trivet.
  6. Seal the lid and select manual. Cook on high for 25 minutes. Close the steam valve.
  7. After 25 release then release the steam.
  8. Remove the pork and place on the serving plate and let sit for 5 minutes.
  9. Fluff the rice with a fork and transfer to serving bowl. Then add the sautéed vegetables on the rice for serving.
